Spaghetti Aglio e Olio

A classic Italian pasta dish with garlic, olive oil, and chili flakes. Preparation Time: 20 minutes
Serving Size: 2 servings
Ingredients:
- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 60ml extra virgin olive oil
- 1 teaspoon red pepper flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
2. While the pasta cooks, heat the olive oil in a large skillet over medium heat.
3. Add the sliced garlic to the skillet and sauté until golden brown but not burnt, about 2-3 minutes.
4. Stir in the red pepper flakes and cook for an additional 30 seconds.
5. Once the pasta is cooked, reserve 1 cup of pasta water, then drain the spaghetti.
6. Add the drained spaghetti to the skillet and toss to coat in the garlic oil. If needed, add some reserved pasta water to help the sauce adhere to the pasta.
7. Season with salt to taste and serve immediately, garnished with chopped parsley and grated Parmesan cheese if desired.
