Spaghetti Aglio e Olio

Spaghetti Aglio e Olio
recipe
A classic Italian pasta dish made with garlic, olive oil, and chili flakes. Preparation time: 20 minutes
Serving size: 4
Ingredients:
- 400g spaghetti
- 6 cloves garlic, thinly sliced
- 1/2 cup extra virgin olive oil
- 1 teaspoon red pepper flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
3. Add the sliced garlic and red pepper flakes to the skillet, cooking until the garlic is golden and fragrant, about 2-3 minutes. Be careful not to burn the garlic.
4. Once the spaghetti is cooked, reserve 1 cup of the pasta water and then drain the pasta.
5. Add the drained spaghetti to the skillet with the garlic and oil, tossing well to combine. If the pasta seems dry, add a bit of reserved pasta water until desired consistency is reached.
6. Season with salt to taste and garnish with fresh parsley.
7. Serve immediately, with grated Parmesan cheese on the side if desired.
