Spaghetti Aglio e Olio

A simple yet flavorful Italian pasta dish made with garlic, olive oil, and chili flakes. Preparation Time: 20 minutes
Serving Size: 2 servings
Ingredients:
- 200g spaghetti
- 4 cloves of garlic, thinly sliced
- 60ml extra virgin olive oil
- 1 teaspoon red pepper flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
2. In a large skillet over medium heat, add the olive oil and sliced garlic. Sauté until the garlic is golden and fragrant, about 2 minutes. Be careful not to burn the garlic.
3. Add the red pepper flakes to the skillet and stir for about 30 seconds.
4. Add the drained spaghetti to the skillet, tossing well to coat in the garlic oil. If the pasta seems dry, add some reserved pasta water, a little at a time, until you reach your desired consistency.
5. Season with salt to taste and toss again.
6. Serve immediately, garnished with fresh parsley and grated Parmesan cheese if desired.
