Spaghetti Aglio e Olio

A simple and quick Italian pasta dish made with garlic, olive oil, and chili flakes. Preparation Time: 20 minutes
Serving Size: 2 servings
Ingredients:
- 200g spaghetti - 4 cloves garlic, thinly sliced
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon red chili flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. 2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
3. Add the sliced garlic and red chili flakes to the skillet. Sauté until the garlic is golden brown but not burnt, about 2-3 minutes.
4. Once the spaghetti is cooked, reserve 1/2 cup of the pasta water, then drain the spaghetti.
5. Add the drained spaghetti to the skillet with the garlic oil. Toss to combine, adding reserved pasta water as needed to create a light sauce.
6. Season with salt to taste and garnish with chopped parsley.
7. Serve immediately, with grated Parmesan cheese if desired.
