Spaghetti Aglio e Olio

Spaghetti Aglio e Olio
recipe
A classic Italian pasta dish made with garlic, olive oil, and chili flakes. Preparation time: 20 minutes
Serving size: 4
Ingredients:
- Spaghetti - 400g
- Olive oil - 1/2 cup
- Garlic - 6 cloves, thinly sliced
- Red chili flakes - 1 teaspoon
- Fresh parsley - 1/4 cup, chopped
- Salt - to taste
- Grated Parmesan cheese (optional) - for serving
Instructions:
1. Cook the spaghetti in a large pot of salted boiling water according to package instructions until al dente. Reserve 1 cup of pasta water and then drain the spaghetti.
2. In a large skillet, heat the olive oil over medium heat.
3. Add the sliced garlic to the skillet and sauté until it turns golden brown, being careful not to burn it.
4. Stir in the red chili flakes and cook for an additional 30 seconds.
5. Add the cooked spaghetti to the skillet and toss to coat in the garlic oil. If the pasta seems dry, gradually add reserved pasta water until you reach the desired consistency.
6. Remove from heat and stir in the chopped parsley. Season with salt to taste.
7. Serve immediately, topped with grated Parmesan cheese if desired.
