Spaghetti Aglio e Olio
recipe

A classic Italian pasta dish that's simple yet flavorful, perfect for a quick weeknight dinner.
Preparation Time: 20 minutes
Serving Size: 2 servings
Ingredients:
- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 1/2 cup extra virgin olive oil
- 1/2 teaspoon red pepper flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the spaghetti.
2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and cook until golden brown, about 2-3 minutes, being careful not to burn it.
3. Stir in the red pepper flakes and cook for an additional minute.
4. Add the drained spaghetti to the skillet, tossing to coat in the garlic oil. If the pasta seems dry, gradually add reserved pasta water until you reach your desired consistency.
5. Season with salt to taste and toss in the chopped parsley.
6. Serve immediately, with grated Parmesan cheese on top if desired.
