Spaghetti Aglio e Olio
recipe
A simple yet delicious Italian pasta dish made with garlic, olive oil, and red pepper flakes. Preparation Time: 20 minutes
Serving Size: 2 servings
Ingredients:
- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 60ml extra virgin olive oil
- 1 teaspoon red pepper flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
2. While the pasta cooks, heat the olive oil in a large skillet over medium heat.
3. Add the sliced garlic to the skillet and sauté for about 2 minutes, until it turns golden brown. Be careful not to burn it.
4. Stir in the red pepper flakes and cook for an additional minute.
5. Once the spaghetti is done, reserve about 1/2 cup of the pasta water and then drain the pasta.
6. Add the drained spaghetti to the skillet with the garlic oil and toss to combine.
7. If the pasta seems dry, add a bit of the reserved pasta water until you reach the desired consistency.
8. Season with salt to taste and garnish with fresh parsley.
9. Serve immediately, topped with grated Parmesan cheese if desired.
