Spaghetti Aglio e Olio

Spaghetti Aglio e Olio
recipe
A classic Italian pasta dish made with garlic, olive oil, and chili flakes. Preparation Time: 20 minutes
Serving Size: 2
Ingredients:
- Spaghetti (200g)
- Olive oil (4 tablespoons)
- Garlic (4 cloves, thinly sliced)
- Red chili flakes (1 teaspoon)
- Fresh parsley (a handful, chopped)
- Salt (to taste)
- Parmesan cheese (optional, for serving)
Instructions:
1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.
2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté until golden brown, being careful not to burn it.
3. Stir in the red chili flakes and cook for an additional 30 seconds.
4. Add the drained spaghetti to the skillet and toss to coat in the oil and garlic mixture. If the pasta seems dry, add a little reserved pasta water to achieve desired consistency.
5. Remove from heat and mix in the chopped parsley. Season with salt to taste.
6. Serve immediately, topped with grated Parmesan cheese if desired.
