Spaghetti Aglio e Olio

A classic Italian pasta dish made with garlic, olive oil, and chili flakes. Preparation Time: 20 minutes
Serving Size: 4 servings
Ingredients:
- 400g spaghetti
- 6 cloves garlic, thinly sliced
- ½ cup extra virgin olive oil
- 1 teaspoon red chili flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.
2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté until golden brown and fragrant, about 2-3 minutes.
3. Add the red chili flakes and stir for another 30 seconds.
4. Add the drained spaghetti to the skillet and toss to coat in the garlic oil. If the pasta is dry, add some reserved pasta water, a little at a time, until desired consistency is reached.
5. Season with salt to taste and toss in the chopped parsley.
6. Serve immediately, topped with grated Parmesan cheese if desired.
