Spaghetti Aglio e Olio

A simple yet flavorful Italian pasta dish made with garlic and olive oil. Preparation Time: 20 minutes
Serving Size: 2 servings
Ingredients:
- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 60ml extra virgin olive oil
- 1/2 teaspoon red pepper flakes
- Salt, to taste
- Fresh parsley, chopped, for garnish
- Grated Parmesan cheese, for serving (optional)
Instructions:
1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
3. Add the sliced garlic to the skillet and sauté until it turns golden brown, about 2-3 minutes. Be careful not to burn the garlic.
4. Add the red pepper flakes and stir for about 30 seconds to release their flavor.
5. Once the spaghetti is cooked, reserve about 1/2 cup of the pasta water and then drain the spaghetti.
6. Add the drained spaghetti to the skillet and toss to coat with the garlic oil. If the pasta seems dry, add a bit of the reserved pasta water.
7. Season with salt to taste and garnish with chopped parsley.
8. Serve immediately, with grated Parmesan cheese on top if desired.
