Spaghetti Aglio e Olio

*An easy and quick Italian pasta dish made with garlic and olive oil. Perfect for a weeknight dinner!*Preparation Time: 20 minutes
Serving Size: 2 servings
Ingredients:
- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 60ml extra virgin olive oil
- 1 teaspoon red pepper flakes
- Salt, to taste
- Fresh parsley, chopped, for garnish
- Grated Parmesan cheese, for serving (optional)
Instructions:
1. Boil a large pot of salted water. Add the spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the spaghetti.
2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and red pepper flakes, and sauté until the garlic is golden and fragrant, about 2-3 minutes.
3. Add the drained spaghetti to the skillet, tossing to coat in the garlic oil. If the pasta seems dry, add a little reserved pasta water to reach the desired consistency.
4. Season with salt to taste and toss in chopped parsley.
5. Serve immediately, topped with grated Parmesan cheese if desired.
