Spaghetti Aglio e Olio

A simple and flavorful Italian pasta dish made with garlic and olive oil. Preparation Time: 20 minutes
Serving Size: 2 servings
Ingredients:
- 200g spaghetti - 4 cloves garlic, thinly sliced
- 1/4 cup extra virgin olive oil
- 1/4 teaspoon red pepper flakes (optional)
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Boil a pot of salted water and cook the spaghetti according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the spaghetti. 2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté until golden, being careful not to burn it.
3. If using, add the red pepper flakes to the skillet and cook for another 30 seconds.
4. Add the drained spaghetti to the skillet, tossing to coat in the garlic oil. If the pasta seems dry, add some reserved pasta water to reach desired consistency.
5. Season with salt to taste and toss in the chopped parsley.
6. Serve immediately, topped with grated Parmesan cheese if desired.
