Spaghetti Aglio e Olio

A classic Italian pasta dish made with garlic, olive oil, and chili flakes. Preparation Time: 15 minutes
Serving Size: 2 servings
Ingredients:
- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 1/2 cup extra virgin olive oil
- 1 tsp red pepper flakes (adjust to taste)
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Boil a large pot of salted water and cook the spaghetti according to package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain the spaghetti.
2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté until golden and fragrant, about 2 minutes. Be careful not to burn the garlic.
3. Stir in the red pepper flakes and cook for another 30 seconds.
4. Add the drained spaghetti to the skillet, tossing to combine with the garlic oil. If the pasta seems dry, add a little reserved pasta water to loosen it up.
5. Season with salt to taste and toss again.
6. Remove from heat and garnish with chopped parsley and grated Parmesan cheese if desired.
7. Serve immediately and enjoy!
