Spaghetti Aglio e Olio

A classic Italian pasta dish made with garlic, olive oil, and chili flakes. Preparation Time: 20 minutes
Serving Size: 2 servings
Ingredients:
- Spaghetti: 200g
- Olive oil: 4 tablespoons
- Garlic: 4 cloves, thinly sliced
- Red chili flakes: 1 teaspoon
- Fresh parsley: a handful, chopped
- Salt: to taste
- Parmesan cheese: for serving (optional)
Instructions:
1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the spaghetti.
2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and cook until golden brown, about 2-3 minutes, being careful not to burn it.
3. Stir in the red chili flakes and cook for another minute.
4. Add the drained spaghetti to the skillet, tossing to combine with the garlic and oil. If the pasta seems dry, add some reserved pasta water a little at a time until the desired consistency is reached.
5. Remove from heat and stir in the chopped parsley. Season with salt to taste.
6. Serve hot, topped with grated Parmesan cheese if desired.
