Spaghetti Aglio e Olio

Ingredients:
- 200g spaghetti - 4 cloves garlic, thinly sliced
- 1/2 cup extra virgin olive oil
- 1/4 teaspoon red pepper flakes (adjust to taste)
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of pasta cooking water, then drain the spaghetti. 2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and red pepper flakes. Sauté until the garlic is golden brown but not burnt.
3. Add the drained spaghetti to the skillet, tossing it in the garlic oil. If the pasta seems dry, add a little reserved pasta cooking water.
4. Season with salt to taste and mix well.
5. Remove from heat and garnish with chopped parsley. Serve immediately with grated Parmesan cheese if desired.
