Ingredients:
- Spaghetti – 200g
- Extra virgin olive oil – 4 tablespoons
- Garlic – 4 cloves, thinly sliced
- Red pepper flakes – 1 teaspoon (adjust to taste)
- Fresh parsley – a handful, chopped
- Salt – to taste
- Parmesan cheese – for serving (optional)
Instructions:
1. Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water and then drain the pasta.
2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and red pepper flakes, sautéing until the garlic is golden but not burnt.
3. Add the drained spaghetti to the skillet, tossing to coat in the garlic oil. If the pasta seems dry, add a bit of the reserved pasta water to achieve the desired consistency.
4. Stir in the chopped parsley and season with salt to taste.
5. Serve immediately, topped with grated Parmesan cheese if desired.
