Spaghetti Aglio e Olio

A classic Italian pasta dish made with garlic, olive oil, and chili flakes. Preparation Time: 20 minutes
Serving Size: 2 servings
Ingredients:
- 200g spaghetti - 4 cloves garlic, thinly sliced
- 1/4 cup extra virgin olive oil
- 1 teaspoon red chili flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Cook the spaghetti in a large pot of salted boiling water according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta. 2. In a large skillet, heat the olive oil over medium heat.
3. Add the sliced garlic to the skillet and sauté until golden brown, about 2 minutes. Be careful not to burn the garlic.
4. Stir in the red chili flakes and cook for another 30 seconds.
5. Add the drained spaghetti to the skillet, tossing to coat in the garlic oil. If the pasta seems dry, add a little reserved pasta water.
6. Season with salt to taste and toss in chopped parsley.
7. Serve immediately, garnished with grated Parmesan cheese if desired.
