Spaghetti Aglio e Olio
recipe

A classic Italian pasta dish that’s quick to make and full of flavor. Perfect for a weeknight dinner!
Preparation Time: 20 minutes
Servings: 4
Ingredients:
- 400g spaghetti
- 6 cloves garlic, thinly sliced
- 1/2 cup extra virgin olive oil
- 1 teaspoon red pepper flakes
- Salt, to taste
- Fresh parsley, chopped, for garnish
- Grated Parmesan cheese, for serving (optional)
Instructions:
1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.
2. In a large skillet over medium heat, add the olive oil and sliced garlic. Cook until the garlic is golden brown, about 2-3 minutes. Be careful not to burn it.
3. Add the red pepper flakes and stir for about 30 seconds.
4. Add the drained spaghetti to the skillet and toss to coat it in the garlic oil. If the pasta seems dry, add a little reserved pasta water until you reach your desired consistency.
5. Season with salt and stir in chopped parsley.
6. Serve immediately, topped with grated Parmesan cheese if desired.
