Ingredients:
- Spaghetti: 200g
- Olive oil: 4 tablespoons
- Garlic: 4 cloves, thinly sliced
- Red chili flakes: 1 teaspoon
- Fresh parsley: a handful, chopped
- Salt: to taste
- Grated Parmesan cheese: for serving (optional)
Instructions:
1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.
2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté until golden brown, being careful not to burn it.
3. Add the red chili flakes and sauté for an additional 30 seconds.
4. Add the drained spaghetti to the skillet, tossing to combine with the garlic and oil. If the pasta seems dry, add some reserved pasta water until you reach the desired consistency.
5. Season with salt and mix in the chopped parsley.
6. Serve hot, topped with grated Parmesan cheese if desired.
