Spaghetti Aglio e Olio

A classic Italian pasta dish made with garlic, olive oil, and chili flakes. Preparation Time: 20 minutes
Serving Size: 2 servings
Ingredients:
- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 60ml extra virgin olive oil
- 1 teaspoon red pepper flakes (adjust to taste)
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.
2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté until golden brown, about 2 minutes. Be careful not to burn the garlic.
3. Add the red pepper flakes and a pinch of salt to the skillet. Stir for about 30 seconds to release the flavors.
4. Add the drained spaghetti to the skillet and toss to coat in the garlic oil. If the pasta seems dry, add some reserved pasta water a little at a time until desired consistency is reached.
5. Remove from heat and garnish with fresh parsley. Serve with grated Parmesan cheese if desired.
