Spaghetti Aglio e Olio

Serving Size: 2 servings
Ingredients:
- 200g spaghetti - 4 cloves garlic, thinly sliced
- 1/2 cup extra virgin olive oil
- 1 teaspoon red pepper flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. 2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
3. Add the sliced garlic to the skillet and sauté until golden brown, about 2-3 minutes. Be careful not to burn the garlic.
4. Add the red pepper flakes and sauté for an additional 30 seconds.
5. Once the spaghetti is cooked, reserve 1/2 cup of the pasta water, then drain the spaghetti.
6. Add the drained spaghetti to the skillet with the garlic and oil. Toss to combine, adding reserved pasta water as needed to loosen the sauce.
7. Season with salt to taste and garnish with fresh parsley.
8. Serve immediately with grated Parmesan cheese if desired.
