Spaghetti Aglio e Olio

A classic Italian pasta dish made with garlic, olive oil, and chili flakes. Preparation Time: 20 minutes
Serving Size: 2 servings
Ingredients:
- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 60ml extra virgin olive oil
- 1 tsp red chili flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Boil a large pot of salted water and cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.
2. In a large skillet over medium heat, add the olive oil and sliced garlic. Sauté until the garlic is golden brown, being careful not to burn it.
3. Add the red chili flakes and stir for about 30 seconds.
4. Add the drained spaghetti to the skillet and toss to coat in the garlic oil. If the pasta seems dry, add a splash of reserved pasta water.
5. Season with salt to taste and toss again.
6. Serve immediately, garnished with fresh parsley and grated Parmesan cheese if desired.
