A classic Italian pasta dish made with garlic, olive oil, and chili flakes.
Preparation Time: 20 minutes
Serving Size: 2 servings
Ingredients:
- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 60ml extra virgin olive oil
- 1 tsp red chili flakes (adjust to taste)
- Salt, to taste
- Fresh parsley, chopped, for garnish
- Grated Parmesan cheese, for serving (optional)
Instructions:
1. Boil a large pot of salted water and cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest.
2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and cook until golden brown, about 2-3 minutes. Be careful not to burn the garlic.
3. Stir in the red chili flakes and cook for another 30 seconds.
4. Add the drained spaghetti to the skillet, tossing to coat with the garlic oil. If the pasta seems dry, add a bit of the reserved pasta water.
5. Season with salt to taste and toss in chopped parsley.
6. Serve immediately, topped with grated Parmesan cheese if desired.
