Spaghetti Aglio e Olio

Ingredients:
- 400g spaghetti
- 6 cloves garlic, thinly sliced
- 1/2 cup extra virgin olive oil
- 1 teaspoon red pepper flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.
2. In a large skillet over medium heat, add the olive oil and sliced garlic. Sauté until the garlic is golden brown, about 2-3 minutes, being careful not to burn it.
3. Add the red pepper flakes to the skillet and stir for 30 seconds to release their flavor.
4. Add the drained spaghetti to the skillet, tossing to coat the pasta in the garlic oil. If the pasta seems dry, add reserved pasta water a little at a time until desired consistency is reached.
5. Season with salt to taste and mix in chopped parsley.
6. Serve immediately, topped with grated Parmesan cheese if desired.
