Spaghetti Aglio e Olio

A simple and classic Italian pasta dish made with garlic, olive oil, and chili flakes. Preparation Time: 20 minutes
Serving Size: 2 servings
Ingredients:
- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 60ml extra virgin olive oil
- 1 teaspoon red chili flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente.
2. While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add sliced garlic and sauté until golden, being careful not to burn it.
3. Add red chili flakes to the skillet and stir for about 30 seconds.
4. Once the spaghetti is cooked, reserve a cup of pasta water and then drain the pasta.
5. Add the drained spaghetti to the skillet with the garlic and chili oil. Toss to coat the pasta in the oil, adding reserved pasta water a little at a time until desired consistency is reached.
6. Season with salt to taste.
7. Serve hot, garnished with fresh parsley and a sprinkle of grated Parmesan cheese if desired.
