Spaghetti Aglio e Olio

A classic Italian pasta dish made with garlic, olive oil, and a hint of chili. Preparation Time: 20 minutes
Serving Size: 2 servings
Ingredients:
- Spaghetti (200g) - Olive oil (4 tablespoons)
- Garlic (4 cloves, thinly sliced)
- Red chili flakes (1 teaspoon)
- Fresh parsley (a handful, chopped)
- Salt (to taste)
- Parmesan cheese (for serving, optional)
Instructions:
1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. 2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
3. Add the sliced garlic to the skillet and sauté until golden brown, being careful not to burn it.
4. Stir in the red chili flakes and cook for another 30 seconds.
5. Once the spaghetti is cooked, reserve a cup of the pasta water, then drain the rest.
6. Add the drained spaghetti to the skillet with the garlic oil. Toss to combine, adding a splash of reserved pasta water if needed to loosen the mixture.
7. Stir in the chopped parsley and season with salt to taste.
8. Serve hot, topped with grated Parmesan cheese if desired.
