Spaghetti Aglio e Olio
recipe

A classic Italian pasta dish made with garlic, olive oil, and red pepper flakes. Perfect for a quick weeknight dinner.
Preparation Time: 20 minutes
Serving Size: 2 servings
Ingredients:
- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 60ml extra virgin olive oil
- 1 teaspoon red pepper flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Reserve 1/2 cup of pasta cooking water, then drain the pasta.
2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and red pepper flakes, cooking until the garlic is golden and fragrant, about 2 minutes.
3. Add the drained spaghetti to the skillet, tossing to coat in the garlic oil. If the pasta seems dry, add a bit of the reserved pasta water.
4. Season with salt to taste and toss again.
5. Remove from heat and garnish with chopped parsley. Serve immediately with grated Parmesan cheese if desired.
