Spaghetti Aglio e Olio

A classic Italian pasta dish made with garlic, olive oil, and chili flakes. Preparation Time: 20 minutes
Serving Size: 2 servings
Ingredients:
- 200g spaghetti - 4 cloves garlic, thinly sliced
- 60ml extra virgin olive oil
- 1 tsp red pepper flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Boil a large pot of salted water and cook the spaghetti according to package instructions until al dente. 2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
3. Add the sliced garlic to the skillet and sauté until golden brown, being careful not to burn it.
4. Stir in the red pepper flakes and cook for another 30 seconds.
5. Once the spaghetti is cooked, reserve about 1/2 cup of pasta water, then drain the spaghetti.
6. Add the drained spaghetti to the skillet with the garlic oil and toss to combine.
7. If the pasta seems dry, add a bit of the reserved pasta water until desired consistency is reached.
8. Season with salt to taste and garnish with chopped parsley.
9. Serve hot, topped with grated Parmesan cheese if desired.
