Spaghetti Aglio e Olio

Ingredients:
- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 60ml extra virgin olive oil
- 1 teaspoon red chili flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
3. Add the sliced garlic to the skillet and sauté for about 2 minutes until golden, but be careful not to burn it.
4. Add the red chili flakes and cook for another 30 seconds, stirring constantly.
5. Once the spaghetti is cooked, reserve a cup of pasta water, then drain the pasta.
6. Add the drained spaghetti to the skillet and toss to coat in the garlic oil. If it's dry, add a little reserved pasta water.
7. Season with salt to taste and toss again.
8. Serve immediately, garnished with chopped parsley and grated Parmesan cheese if desired.
