Ingredients:
- Spaghetti - 200g
- Extra virgin olive oil - 4 tablespoons
- Garlic - 4 cloves, thinly sliced
- Red pepper flakes - 1 teaspoon (adjust to taste)
- Fresh parsley - a handful, chopped
- Salt - to taste
- Parmesan cheese - for serving (optional)
Instructions:
1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.
2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and red pepper flakes, sautéing until the garlic is golden but not burnt, about 2 minutes.
3. Add the drained spaghetti to the skillet and toss to coat in the garlic oil. If the pasta seems dry, add some reserved pasta water a little at a time until you reach the desired consistency.
4. Remove from heat and stir in the chopped parsley. Season with salt to taste.
5. Serve immediately, topped with grated Parmesan cheese if desired.
