Spaghetti Aglio e Olio

A classic Italian pasta dish made with garlic, olive oil, and chili flakes. Preparation time: 20 minutes
Serving size: 4 servings
Ingredients:
- Spaghetti: 400g
- Olive oil: 1/2 cup
- Garlic: 4 cloves, thinly sliced
- Red chili flakes: 1 tsp (adjust to taste)
- Fresh parsley: 1/4 cup, chopped
- Salt: to taste
- Grated Parmesan cheese: for serving (optional)
Instructions:
1. Cook the spaghetti in a large pot of salted boiling water according to package instructions until al dente. Reserve 1 cup of pasta water and then drain the spaghetti.
2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté until golden brown, about 2-3 minutes. Be careful not to burn the garlic.
3. Add the red chili flakes to the skillet and stir for about 30 seconds.
4. Add the drained spaghetti to the skillet and toss to coat in the garlic oil. If the pasta seems dry, add a little reserved pasta water until you reach your desired consistency.
5. Remove from heat and stir in the chopped parsley and salt to taste.
6. Serve hot, topped with grated Parmesan cheese if desired.
