Recipe:
- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 60ml extra virgin olive oil
- 1 teaspoon red pepper flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Cook the spaghetti in a large pot of salted boiling water according to package instructions until al dente. Reserve ½ cup of pasta water and then drain the spaghetti.
2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté until golden brown, about 2 minutes. Be careful not to burn the garlic.
3. Add the red pepper flakes and sauté for another 30 seconds to release their flavor.
4. Add the drained spaghetti to the skillet along with the reserved pasta water. Toss well to combine and coat the spaghetti in the oil and garlic.
5. Season with salt to taste and cook for an additional minute.
6. Remove from heat and stir in the chopped parsley.
7. Serve immediately, topped with grated Parmesan cheese if desired.
