Spaghetti Aglio e Olio

A classic Italian pasta dish made with garlic, olive oil, and a hint of chili. Preparation Time: 20 minutes
Serving Size: 2 servings
Recipe:
- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 1/2 teaspoon red pepper flakes
- 1/4 cup extra virgin olive oil
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water and then drain the spaghetti.
2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté until golden brown, about 2-3 minutes. Be careful not to burn the garlic.
3. Stir in the red pepper flakes and cook for another 30 seconds.
4. Add the drained spaghetti to the skillet and toss to coat in the garlic oil. If the pasta seems dry, add a little reserved pasta water.
5. Season with salt to taste and mix in the chopped parsley.
6. Serve immediately, topped with grated Parmesan cheese if desired.
