Spaghetti Aglio e Olio

Serving Size: 2 servings
Recipe:
- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 1/2 teaspoon red pepper flakes (adjust to taste)
- 1/4 cup extra virgin olive oil
- Salt, to taste
- Fresh parsley, chopped for garnish
- Grated Parmesan cheese (optional)
Instructions:
1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the spaghetti.
2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and red pepper flakes, cooking until the garlic is golden and fragrant, about 2 minutes.
3. Add the drained spaghetti to the skillet, tossing to coat in the oil and garlic mixture. If the pasta seems dry, add a little reserved pasta water.
4. Season with salt to taste and toss in the chopped parsley.
5. Serve immediately, garnished with grated Parmesan cheese if desired.
