Spaghetti Aglio e Olio

A simple and classic Italian pasta dish with garlic and olive oil. Preparation time: 20 minutes
Serving size: 4
Ingredients:
- 400g spaghetti - 6 cloves garlic, thinly sliced
- 100ml extra virgin olive oil
- 1 tsp red pepper flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Boil a large pot of salted water and cook the spaghetti according to package instructions until al dente. 2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
3. Add the sliced garlic and red pepper flakes to the skillet and sauté until the garlic is golden brown (about 2-3 minutes).
4. Once the spaghetti is cooked, reserve 1 cup of pasta water and drain the rest.
5. Add the drained spaghetti to the skillet with the garlic oil. Toss well to combine.
6. If the pasta seems dry, add a little reserved pasta water until the desired consistency is reached.
7. Season with salt to taste and toss in the chopped parsley.
8. Serve hot, topped with grated Parmesan cheese if desired.
