A classic Italian pasta dish, Spaghetti Aglio e Olio is quick and easy to make, perfect for a weeknight dinner. Preparation Time: 20 minutes
Serving Size: 2 servings
Recipe:
- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 1/2 cup extra virgin olive oil
- 1/2 teaspoon red pepper flakes (adjust to taste)
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the spaghetti.
2. In a large skillet, heat olive oil over medium heat. Add sliced garlic and red pepper flakes, sautéing for about 2 minutes until the garlic is golden and fragrant.
3. Add the drained spaghetti to the skillet, tossing to combine with the garlic oil. If needed, add reserved pasta water to help coat the spaghetti.
4. Season with salt and mix well. Remove from heat and garnish with chopped parsley.
5. Serve hot, with grated Parmesan cheese if desired.
