Spaghetti Aglio e Olio
recipe
A classic Italian pasta dish made with simple ingredients that deliver big flavor. Preparation Time: 20 minutes
Serving Size: 2
Ingredients:
- Spaghetti - 200g - Olive oil - 4 tablespoons
- Garlic - 4 cloves, thinly sliced
- Red pepper flakes - 1 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Grated Parmesan cheese - for serving (optional)
Instructions:
1. Cook the spaghetti in a large pot of salted boiling water according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti. 2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and cook until golden brown, about 2 minutes. Be careful not to burn the garlic.
3. Add the red pepper flakes to the skillet and sauté for another 30 seconds.
4. Add the drained spaghetti to the skillet, tossing to coat in the garlic oil. If the pasta seems dry, add some reserved pasta water a little at a time until desired consistency is reached.

6. Serve immediately, topped with grated Parmesan cheese if desired.
