Spaghetti Aglio e Olio

Spaghetti Aglio e Olio
recipe

A simple and classic Italian pasta dish made with garlic, olive oil, and chili flakes. Perfect for a quick weeknight dinner.
Preparation Time: 20 minutes
Serving Size: 2
Ingredients:
- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 60ml extra virgin olive oil
- 1 teaspoon red pepper flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water and then drain the pasta.
2. In a large skillet over medium heat, add the olive oil and sliced garlic. Sauté until the garlic is golden and fragrant, about 2-3 minutes. Be careful not to burn the garlic.
3. Add the red pepper flakes and sauté for an additional 30 seconds.
4. Add the drained spaghetti to the skillet, tossing to combine with the garlic and oil. If the pasta seems dry, add a bit of the reserved pasta water until you reach your desired consistency.
5. Season with salt to taste and toss in the chopped parsley.
6. Serve immediately, topped with grated Parmesan cheese if desired.
