Spaghetti Aglio e Olio
recipe
A classic Italian pasta dish made with simple ingredients for a quick and tasty meal. Preparation Time: 20 minutes
Serving Size: 4 servings
Ingredients:
- 400g spaghetti
- 6 cloves garlic, thinly sliced
- 1/2 cup extra virgin olive oil
- 1 teaspoon red pepper flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
2. While the pasta cooks, heat the olive oil in a large skillet over medium heat.
3. Add the sliced garlic to the skillet and sauté until golden brown, being careful not to burn it, about 2 minutes.
4. Stir in the red pepper flakes and cook for another 30 seconds.
5. Once the spaghetti is cooked, reserve 1 cup of the pasta water and drain the rest.
6. Add the drained spaghetti to the skillet with the garlic oil, tossing to coat.
7. If the pasta seems dry, add a little reserved pasta water to achieve the desired consistency.
8. Season with salt to taste and toss in the chopped parsley.
9. Serve immediately, topped with grated Parmesan cheese if desired.
