Spaghetti Aglio e Olio

A classic Italian pasta dish made with garlic, olive oil, and chili flakes. Preparation Time: 20 minutes
Serving Size: 2 servings
Ingredients:
- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 60ml extra virgin olive oil
- 1 teaspoon red chili flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Cook the spaghetti in a large pot of salted boiling water according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.
2. In a large skillet, heat the olive oil over medium heat.
3. Add the sliced garlic and red chili flakes, sautéing until the garlic is golden and fragrant, about 2 minutes.
4. Add the drained spaghetti to the skillet, tossing to coat in the garlic oil.
5. If the pasta seems dry, gradually add a bit of the reserved pasta water until you reach the desired consistency.
6. Season with salt to taste and toss in the chopped parsley.
7. Serve hot, garnished with grated Parmesan cheese if desired.
