Spaghetti Aglio e Olio

A classic Italian pasta dish made with garlic, olive oil, and chili flakes. Preparation time: 20 minutes
Serving size: 2 servings
Ingredients:
- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 60ml extra virgin olive oil
- 1 teaspoon red chili flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Bring a pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.
2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté until golden brown, being careful not to burn it.
3. Add the red chili flakes to the skillet and cook for another minute.
4. Add the drained spaghetti to the skillet, tossing it with the garlic and oil mixture. If the pasta seems dry, add some reserved pasta water until you reach the desired consistency.
5. Season with salt, toss in the chopped parsley, and mix well.
6. Serve hot, garnished with additional parsley and grated Parmesan cheese, if desired.
