Spaghetti Aglio e Olio

Spaghetti Aglio e Olio
recipe

A classic Italian pasta dish that's quick and simple to prepare, featuring garlic, olive oil, and a hint of chili.
Preparation Time: 20 minutes
Serving Size: 2 servings
Ingredients:
- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 60ml extra-virgin olive oil
- 1/2 teaspoon red pepper flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Cook the spaghetti in a large pot of salted boiling water according to package instructions until al dente. Reserve 1/2 cup of pasta water and then drain the spaghetti.
2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté until golden and fragrant, about 2 minutes. Be careful not to burn the garlic.
3. Add the red pepper flakes and a pinch of salt to the skillet, stirring to combine.
4. Add the drained spaghetti to the skillet, tossing to coat the pasta in the garlic oil. If the pasta seems dry, add a little reserved pasta water to achieve the desired consistency.
5. Remove from heat and stir in the chopped parsley. Serve immediately, garnished with grated Parmesan cheese if desired.
