Spaghetti Aglio e Olio

A quick and classic Italian pasta dish made with garlic, olive oil, and chili flakes. Preparation Time: 20 minutes
Serving Size: 2 servings
Ingredients:
- Spaghetti - 200g - Olive oil - 4 tablespoons
- Garlic - 4 cloves, thinly sliced
- Red chili flakes - 1 teaspoon
- Fresh parsley - a handful, chopped
- Salt - to taste
- Grated Parmesan cheese - for serving (optional)
Instructions:
1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. 2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
3. Add the sliced garlic to the skillet and sauté until golden brown, being careful not to burn it.
4. Stir in the red chili flakes and cook for another minute.
5. Once the spaghetti is cooked, reserve a cup of pasta water and drain the rest.
6. Add the drained spaghetti to the skillet, tossing it in the garlic oil. If the pasta seems dry, add a little reserved pasta water.
7. Stir in the chopped parsley and season with salt to taste.
8. Serve immediately, topped with grated Parmesan cheese if desired.
