Spaghetti Aglio e Olio

A simple and classic Italian pasta dish made with garlic, olive oil, and chili flakes. Preparation Time: 15 minutes
Serving Size: 2 servings
Ingredients:
- Spaghetti (200g)
- Olive oil (4 tablespoons)
- Garlic (4 cloves, thinly sliced)
- Red chili flakes (1 teaspoon)
- Fresh parsley (2 tablespoons, chopped)
- Salt (to taste)
- Parmesan cheese (optional, for serving)
Instructions:
1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
3. Add the sliced garlic to the skillet and sauté for about 2 minutes, or until golden brown. Be careful not to burn the garlic.
4. Add the red chili flakes to the skillet and stir for another 30 seconds.
5. Once the spaghetti is cooked, reserve a cup of pasta water and then drain the pasta.
6. Add the drained spaghetti to the skillet with the garlic and chili oil. Toss to combine, adding reserved pasta water a little at a time to create a light sauce.
7. Stir in the chopped parsley and season with salt to taste.
8. Serve immediately, topped with grated Parmesan cheese if desired.
