Spaghetti Aglio e Olio

A classic Italian pasta dish made with garlic, olive oil, and chili flakes. Preparation time: 20 minutes
Serving size: 4 servings
Ingredients:
- 400g spaghetti
- 6 cloves garlic, thinly sliced
- 100ml extra virgin olive oil
- 1 teaspoon red chili flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Boil a large pot of salted water and cook the spaghetti according to the package instructions until al dente. Reserve 1 cup of the pasta water, then drain the spaghetti.
2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté until it turns golden and fragrant, about 2-3 minutes. Be careful not to burn the garlic.
3. Add the red chili flakes and sauté for another 30 seconds.
4. Toss the drained spaghetti into the skillet with the garlic oil, mixing well to coat the pasta. If the pasta seems dry, add a little reserved pasta water to reach the desired consistency.
5. Season with salt to taste and remove from heat.
6. Serve immediately, garnished with chopped parsley and grated Parmesan cheese if desired.
