Serving Size: 2 servings
Ingredients:
- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 1/2 cup extra virgin olive oil
- 1/4 teaspoon red pepper flakes (adjust for spice preference)
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the spaghetti.
2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and cook until golden brown, stirring frequently to prevent burning.
3. Add the red pepper flakes and cook for another 30 seconds.
4. Add the drained spaghetti to the skillet and toss to coat in the garlic oil. If the pasta seems dry, add a little reserved pasta water until desired consistency is reached.
5. Season with salt to taste and toss in the chopped parsley.
6. Serve immediately, topped with grated Parmesan cheese if desired.
