Spaghetti Aglio e Olio

A classic Italian pasta dish made with garlic, olive oil, and chili flakes. Preparation time: 20 minutes
Serving size: 2 servings
Ingredients:
- 200g spaghetti - 4 cloves garlic, thinly sliced
- 60ml extra virgin olive oil
- 1 tsp red chili flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. 2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the sliced garlic and sauté until golden brown, being careful not to burn it.
3. Add the red chili flakes to the skillet and cook for an additional 30 seconds.
4. Once the spaghetti is cooked, reserve a cup of pasta water, then drain the pasta.
5. Add the drained spaghetti to the skillet with the garlic and chili oil, tossing to coat. If the pasta seems dry, add a bit of the reserved pasta water.
6. Season with salt to taste and top with chopped parsley.
7. Serve hot, with grated Parmesan cheese if desired.
