Spaghetti Aglio e Olio

Spaghetti Aglio e Olio
recipe

A classic Italian pasta dish made with garlic, olive oil, and red pepper flakes. Ready in just 20 minutes and perfect for a quick weeknight dinner. Serves 2.
Preparation Time: 20 minutes
Serving Size: 2

Recipe:

- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 1/2 cup extra virgin olive oil
- 1 teaspoon red pepper flakes (adjust to taste)
- Salt, to taste
- Fresh parsley, chopped, for garnish
- Grated Parmesan cheese (optional)

Instructions:

1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the spaghetti.
2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté until golden brown, about 1-2 minutes. Be careful not to burn the garlic.
3. Add the red pepper flakes and stir for a few seconds to release their flavor.
4. Add the drained spaghetti to the skillet, tossing to coat in the garlic oil. If the pasta seems dry, add some reserved pasta water, a little at a time, until you reach your desired consistency.
5. Season with salt to taste and toss in the chopped parsley.
6. Serve immediately, garnished with grated Parmesan cheese if desired.
