Ingredients:
- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 60ml extra virgin olive oil
- 1 teaspoon red pepper flakes
- Salt, to taste
- Fresh parsley, chopped, for garnish
- Grated Parmesan cheese, for serving (optional)
Instructions:
1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water and then drain the spaghetti.
2. In a large skillet over medium heat, add the olive oil. Once hot, add the sliced garlic and red pepper flakes. Sauté until the garlic is golden and fragrant, about 2 minutes, being careful not to burn it.
3. Add the drained spaghetti to the skillet, along with a splash of reserved pasta water. Toss to combine and coat the spaghetti in the garlic oil.
4. Season with salt to taste and toss again. If the pasta seems dry, add more reserved pasta water as needed.
5. Remove from heat and garnish with chopped parsley. Serve immediately, topped with grated Parmesan cheese if desired.
