Spaghetti Aglio e Olio

Spaghetti Aglio e Olio
recipe

A classic Italian pasta dish made with garlic, olive oil, and a hint of chili pepper. Perfect for a quick weeknight dinner.
Preparation Time: 20 minutes
Serving Size: 2 servings

Ingredients:

- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 60ml extra virgin olive oil
- 1 tsp red pepper flakes (adjust to taste)
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)

Instructions:

1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta cooking water, then drain the spaghetti.
2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté until golden brown, being careful not to burn it.
3. Stir in the red pepper flakes and cook for an additional 30 seconds.
4. Add the drained spaghetti to the skillet and toss to coat in the oil and garlic mixture. If the pasta seems dry, add a bit of the reserved pasta water.
5. Season with salt to taste and mix well.
6. Serve hot, garnished with chopped parsley and grated Parmesan cheese if desired.
